Here is one more popular recipe from North Indian cuisine, Chana Masala. A very simple recipe with minimum spices and yet delicious. It goes well with everything you can think and in every occasion.

Ingredients:
? 2 cups white chickpeas (chana)
? 1 tbsp of oil
? 2 large onions (finely chopped)
? 1 large tomato (finely chopped)
? 1 tsp – chana masala or garam masala
? 1 tsp – chopped garlic
? 1/2 tsp – chopped ginger
? 1 tsp – red chilli powder
? 1 tsp – salt (adjust to taste)
? Coriander leaves / cilantro for garnishing
Preparation Instructions:
- Soak white chickpeas (chana) overnight and pressure cook (when cooking) for 3 whistles.
- Heat oil in a skillet and add chopped onions to it. Saute till onions turn golden brown.
- Add ginger and garlic and fry them for few seconds.
- Add tomatoes and cook till they become soft.
- Let all this mixture cool and blend it into a fine paste.
- In the same pan, add the paste (you can also heat a little oil and then add the paste).
- Add boiled white chickpeas, salt, chilli powder and some water. Cook for some time.
- Turn off the stove. Add garam masala or chana masala and garnish with chopped coriander leaves.
